I've just observed an instance in which a French artillery piece was charged by Austrian infantry and captured, but the piece did not rout (it switched to the Austrian side). Is this behavior expected for the latest release?

It is still possible to capture a gun with infantry, although it is rare. Normally it will just rout. It's a game engine mechanic and not something that can be completely changed, as we do not have the code for the game engine. The mod can minimize that happening but can't remove it completely.
