Leaders and cavalry go underground?
Anyone on horseback will be hidden so, all you see is their head and flags.

Are you using one of the stock Waterloo OOBs?
This does happen with them, unfortunately. We play using the older sprites, of which there is a Waterloo OOB in the mod.

I am playing solo sandbox with 1805 Austrians.
If I move camera around eventually the whole figure appears.
Move the camera and lower bodies of horsemen disappear again.

I tried the Austria 1805 OOB on Sandbox. Belgium Wavre map.

I didn't add the maps mod.
I used the plaines and huegel? Maps. Basically the 1st 2 maps of Waterloo.

If you are using the stock maps with the stock vegetation, then the disappearing sprites will be part of the game. You'll need to use the KS Supplemental Maps, which contain modified versions of most of the stock maps.
